My husband currently has the Apple Watch series 5. He uses all of its health features. I am thinking of getting him the 7 for Christmas but wasn't sure if there was really a difference?

One thing I'd look at is the battery health of his current watch. On the Watch, Settings>Battery>Battery Health. If it's below 80% or close to it, you might be looking at needing to replace the battery. It might then be worth considering if you want to put that money toward a new watch instead.
The Watch 5 also has a trade-in value of up to $145, depending on model and condition.
