This sounds like the keyboard is expected behavior. While we can't say if this works or not but try this step; rotate the iPhone to landscape orientation when in your car. We know this helps to use a larger keyboard for typing in many apps, see if it has any effect on the keyboard you see.

Which iPhone are you using? Does it have the current iOS 15.2 installed? Update your iPhone, iPad, or iPod touch
