This may be dumb to ask, but I’ve recently ordered an iPad Pro 2021 11” on AT&T, and it’s been a week since then. I got an email saying that it is shipping from York, PA, when I live in LA. Is this normal?

AT&T probably has product stored in numerous regional warehouses. I used to work for Verizon in inventory operations. When possible, things were shipped from the closest warehouse. But, if it wasn't available there, it would ship from somewhere else.
I assume that AT&T told you when to expect the product. If that delivery window has passed, contact AT&T directly.

Why does it matter to you where it is shipped from?
we are all other users here and do not work for Apple, so we do not know where and how AT+T or Apple keep their warehouses stocked - sorry.
