Apple Watch series 7 set up

I have the brand new iPhone 13 pro max and the brand new series 7 Apple Watch (so this isn’t an issue with hardware). I follow the directions on my phone to pair the watch, boom its paired. Then the next screen that pops up is “Do you want to update your Apple Watch” if I click yes, it says “ downloading software update” then stays on that screen for about 5 minutes until it says “ unpairing Apple Watch.” …. So I was like ok maybe I’m doing something wrong and need to actually set up the watch before I download the software update. So then I get it repaired and skip the screen that says “would you like to update your Apple Watch” and go straight to set up. It then asks me which hand I would like to wear it on, my left, then the screen after that says “connecting to Apple Watch this may take a moment..” Its stuck on this screen for about 3 minutes until it says, cannot connect make sure your Apple Watch has Bluetooth on and airplane mode off ( I cant even use the **** thing to get to any setting or screen on the Apple Watch to turn Bluetooth off or airplane mode on so that question is dumb) then If I press try again, It tried to connect again until the whole thing crashes and says unpairing Apple Watch. Just don’t see why this is happening after spending like 2000 dollars on these products combined.
