Is there any way to set up a profile to let Apple Music know the type of music I like to listen to? I am a senior citizen and the type of CRAP music that shows up every time I click on Apple Music is almost enough to make me stick a sharp object in my eardrum...sorry but almost anything after 1979 is simply NOISE to my ears.

According to the 'Browse Apple Music' section in:

Find new music with Apple Music on iPhone - Apple Support

you can Play music that matches your mood or Browse your favorite categories but I don't think you can set a default profile as you would like. About as close as you can get is to use restrictions in Screen Time:

Use parental controls on your child's iPhone, iPad, and iPod touch - Apple Support

But I think that is a really good idea and you should make that suggestion to Apple:

Product Feedback - Apple
