Restore in Progress - doesn't end

I've replaced my iPhone8 with an iPhone13 (iOS 15.1). Restoring is stuck at "An estimated 800 MB will be required to finish restoring your apps and data". From what I can tell the restore is complete, and "estimate" has been stuck at 800 MB for about 20 hrs.

In the current state, I cannot update to iOS 15.2, and cannot sign out of my Apple ID until the restore is complete (each of these were reported on other threads to resolve this).

I began the restoration by transferring directly from iPhone8 -> iPhone13. Perhaps I should have restored from iCloud instead.

Thanks for the reply. My iPhone did not freeze. The restoration just didn't finish. I ultimately terminated the restore process which resulted in losing 800MB of data (don't know what it was).
