I have the very first iPad Air. It is on the latest iPadOS that it can run 12.5.5. But I keep getting errors when trying to back it up to my Mac via the Finder. There is plenty of space on the Mac. Are their utilities I can use to Backup the iPad to a Mac when Finder method does not work?

That may depend on why the finder method isn't working for you. A better description of the problems you are having could help us figure that out, as Phil0124 indicated.
There are alternatives to the use of Finder for backing up iPads and iPhones, but they may run into the same problem.
