Why can’t I change my payment method for my Apple care???

Cancel or change the payment method for your AppleCare plan https://support.apple.com/en-us/HT202704
If you received an email for a billing problem, and stating that you need to complete payment setup, you will need to link your monthly agreement to your Apple ID.
Visit mysupport.apple.com/link and follow on screen steps to complete payment setup. This will link the AppleCare Agreement to your Apple ID and is then managed under your subscription settings. Once its linked, you should be able to update your payment method in your device settings.
Change, add, or remove payment methods https://support.apple.com/en-us/HT201266
If you purchased your AppleCare+ Agreement through a third party, you may need to reach out to them to update the payment method.
If you still need assistance updating payment method, contact Apple Support. https://www.apple.com/contact/
