Check with your carrier for 5G. Your carrier and your plan and your local network will all need to include 5G.

I updated latest iOS bt still there is no Dolby option in setting under audio
You have updated your iPhone to iOS 15.2, and you wish to have Spatial Audio with Dolby Atmos.
To have Spatial Audio with Dolby Atmos, both your audio playback path and your selected music must meet the requirements.
Your audio playback path or your selected music seemingly does not meet those requirements.
Until all requirements are met, you will not be able to enable the feature.
If you wish to learn about the requirements your playback path and your music must meet for Spatial Audio with Dolby Atmos, you will want to tap or click on the following blue-text link ➡️ About spatial audio with Dolby Atmos in Apple Music - Apple Support
If you believe that your playback path and your particular selected music both meet the requirements, then please indicate which audio equipment or path used, and which song you are using for audio playback, with your iPhone running iOS 15.2.

This answer addresses the question of Dolby Atmos with Apple Music but mine is a different use case: what I’d like to do is to use a headset with Dolby Atmos support to watch Disney+/Netflix premium content on my iPad. Is Dolby Atmos only available to Music subscribers (I’m not) ?
I’m unaware of any third-party hardware or content support for Spatial Audio with Dolby Atmos.
It might be possible for an app to add this, but that’d be a fair amount of work, with a modicum of licensing.

If your Carrier provides 5G only then 5G option will appear. Contact your Carrier and get the SIM for 5G
