It is a process but a very efficient process. First, you get your iPhone’s trade-in value locked in (5 minutes or less). You delete all your data on your old iPhone and disable Find My. They will show you how to do that if you don’t know (2 minutes - 30 minutes if you choose to create an iCloud backup). Make sure that you create a recent backup at home and before your leave to make the transaction at the Apple Store. You purchase the new iPhone (2 minutes).

Yes you can. That is probably the best way to conduct a trade-in. This way you know right then and there what your exact trade-in value for your iPhone is.

When you purchase a new iPhone with a trade-in then you pay the full amount first. Apple will send you a return kit to return your old device. When you send the old device back, using that return kit, then your old device will be examined to ensure that it meets all the requirements for the value that was proposed to you. If the old device meets the requirements, then your payment method that you used to pay for the new iPhone will be credited. If it does not meet the requirements, then you will be notified of a lesser or a greater value that you can either accept or reject. If you accept then that amount will be credited to your payment method and if you reject then your device will be sent back to you without any amount credited.

It is a heck of a lot easier to make and complete the trade-in at the Apple Store. If you do this personally at the Apple Store, then you will know the trade-in value offered to which you can either accept or reject. If you accept then you only pay the difference between the full value of the new iPhone and accepted trade-in value. If you reject, then you can take your old device home and pay the full price for the new iPhone.
