Then you shouldn't be using iTunes. You should be using Finder to do your Restore. See the instructions here:

What version of Mac OS are you using on the MacBook? I know that newer versions do not use iTunes, but use Finder. I believe that change happened at Catalina. I'm a very new Mac user, so I'm not good at understanding all of it, except what I've read here.
