Restore

I’ve tried to restore iPad 7th gen through iTunes on my MacBook Pro and it gets about 900 megs in and discontinues

Then you shouldn't be using iTunes. You should be using Finder to do your Restore. See the instructions here:

What version of Mac OS are you using on the MacBook? I know that newer versions do not use iTunes, but use Finder. I believe that change happened at Catalina. I'm a very new Mac user, so I'm not good at understanding all of it, except what I've read here.
