I accidentally deleted a much needed text thread from my phone. The latest iCloud backup does not include that thread. Is there a way I can back up or restore a later version to restore the text messages?

If you use messages in iCloud, the message is irrecoverable. If you do not, you may be able to restore from a backup that contains the thread.
As muguy stated, if you're using iCloud syncing for messages, once you delete them they are gone. If you are not, you can try restoring the phone from your backup, though it seems you're saying you don't have a backup that contains the messages.
There is no place on iCloud to see messages.
