Restoring from Time Machine

My SSD had S.M.A.R.T. errors and had to be replaced. Other World Computer replaced it and loaded Catalina.

If I migrate from Time Machine, will it include the OS that was on my latest backup? I believe the latest backup was when I was running Mojave.

If you want Mojave back you'll have to reinstall it.

Best way to do it is to create a bootable installer How to create a bootable installer for macOS - Apple Support

Now reboot holding Option and choose the installer to load Recovery Mode

Once Recovery Mode is up, open Disk Utility, choose View all devices View all devices or only volumes in Disk Utility on Mac - Apple Support

Now remove all volumes and partitions Add, delete, or erase APFS volumes in Disk Utility on Mac - Apple Support, Erase and reformat a storage device in Disk Utility on Mac - Apple Support

Close DU and choose reinstall macOS.

With Mojave now installed, recover from the backup.

If you leave Catalina, the Migration assistant will migrate your files and apps, but if you have any 32-bit app, it won't run because Catalina only runs 64-bit apps. You'll have to download a new version of your app or find a replacement.
