You may accidentally set the Color Filters option set to ON.

Double check the following: Open Settings ➔ Accessibility ➔ Display & Text Size: Ensure that Smart Invert, Classic Invert and Color Filters are set to OFF.

Two things...

A. Try Using Warmer Colors:

To do so, Use Night Shift on your iPhone, iPad, and iPod touch - Apple Support

and...

B. Reset the Home Screen Layout...

Everything will show up a default, including (i.e. Contacts). You'll have to make note of what is on each Home Screen, prior to resetting it.

Go Here: Move and organize apps on iPhone - Apple Support

Scroll to: Reset the Home Screen and Apps to their Original Layout

  1. Go to: Settings
  2. Tap: General
  3. Tap: Reset
  4. Tap: Reset Home Screen Layout

Change in all app colors
