Where can I do a copy of my iphone if I´m using Monterey on my laptop and can´t download itunes?

You can back up your iPhone to iCloud. See this.

This will tell you what it backs up for restoration either to the same phone or a new one.

Use the Finder. With it connected, it should appear in the sidebar.

iTunes has been dead for several years.
