I bought a new phone. I want to switch the sim card to have my old phone be my kids and the new one to be my phone with my old sim card. When I switch the sim cards, my data is still on the old phone.

User data is not stored on the SIM card. To clear the old phone, use the following instructions: What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support and then set it up as new. Each person should use their own Apple ID.
