Erase all information from old IPhone

I got a new IPhone for Xmas which I downloaded some data from my old IPhone 7 plus to get used to. The new IPhone 13 Max Pro will be replaced with another 13 Max Pro middle of January. I have to erase again all information from the new one when I have to send it back in 2 days.

When I erase all data from the new IPhone 13 Max Pro which I have to return in 2 days do I loose all data from all devices like IPhone 7 plus and IPad?

I need to sure I don't loose all data when I erase all data from IPhone 13 Max Pro before mail it back.
