I got an apple watch and to pair with it I had to update my phone to IOS 15. Whenever I tried to update it there was an error. So, I tried to update it with a Mac, and it said the IOS 14.7 was the current version and that I couldn’t update it.

Restart the phone and check again for the proper update.
You have a beta profile installed.
How to uninstall iOS beta software.
Go to Settings > General > Storage and delete the 14.7 profile if there is one in there.
Then go to Settings > General > Profiles and delete the 14.7 profile. Restart your phone and you should now be able to update.
