of course it didn't happen here but every other time I type B) in text messages, Facebook, notes and email, (basically anywhere but this support question) the cool guy emoji auto replaces. How do I stop it??!!

Thank you for contacting Apple Support Communities. Based on what you stated, it seems like when you type B), it is being replaced with an emoji.
This can be expected if the letters are orange and you tap on them. You can then tap the emoji and it will revert back.
If you go to Settings > General and tap Keyboard. Tap Keyboards and remove the emoji keyboard, does it keep replacing B)?
