I’ve exported photos using several methods, and captions do not appear to be exported in IPTC metadata (or anywhere else for that matter.) Is there a utility for either iOS or Windows that can accomplish this?

In an iPhone when you enter a caption and transfer it to a Mac the caption is termed as Description see the pic below.
Import to Photos app in Windows and see the metadata, if the same is present. I have no way of cross-checking that.
