I just clicked on the link in an email for my 3-months of free Apple TV+ and it said I only have 7 days free and then would be charged 5.99/month on Jan. 8th where did my 3 months go?
The offer is for the first user of the new eligible device. In this case, your wife would have the option to redeem. If she hasn’t enjoyed this subscription service before (one offer per user or family), then she can redeem in the TV app on her new iPad.

Then it must be from when my wife bought her iPad but I still have the email saying there’s a three month trial to use
This didn’t help, I bought an Apple Watch for my wife and got the emails saying I had 3 months free and then when I went on to Apple TV+ I only got 7 day trial.
The watches don't qualify for the offer.
