To add - one would need a Full Installer of the original Monterey 12.0.1 kept on an external drive for future purposes and then create a bootable Installer.
Notation: This may work but have only experiments on Intel Based computer. Would not attempt anything like this on a Apple Silicon M1 Based computer.
The 12.0.1 full installer is still available from softwareupdate in Terminal. You would need to create a USB installer to bot from in order to completely erase your drive, then install 12.0.1
The question remains, why would you want to do that?
You would need a bootable installer with macOS Monterey 12.0.1. Note that Version 12.1 fixes many issues introduced in 12.0.1.

Downgrading to 12.0.1 would seem to be a bad idea.
The first public release of Monterey was 12.0.1, the first update and current version is 12.1.
May I ask why you want to (I assume) for 12.1 to 12.0.1?
