If this is an actual text message, SMS/MMS, that would involve a non-iOS device, you will not be able to add someone. See this about Group messages. Send a group text message on your iPhone, iPad, or iPod touch - Apple Support and this, Add and remove people in group text messages on your iPhone, iPad, or iPod touch - Apple Support
