can I update my macbook pro from 2012 with macOS version 11.5.1

Sorry, I don't know anything about Final Cut Pro but Wikipedia indicates that 10.4.8 will work with macOS Mojave (10,14) or later. You may want to post a question in the Final Cut Pro section of this forum to see if someone there can help: https://discussions.apple.com/community/professional_applications/final-cut-pro
