Thanks for using Apple Support Communities. Just to be clear, are you saying that this option isn't available to you or was this question simply hypothetical? If the option isn't available, you'll want to check that you're running the latest iOS version. This can be verified in Settings > General > Software Update. Also, are you using Screen Time? Were you able to try the steps listed in the article you reached us from?

Is this iPhone being managed by somebody else?
Is Screen Time enabled (Settings > Screen Time > Content & Privacy Restrictions > Content Restrictions), or are there configuration profiles loaded?
If either of those (or both) are present and enabled, private browsing can be disabled.
I also don’t seem to have the Private option
Tap “done” (circled):
Tap (and hold!) the boxes (circled):
Select “private” from the pop-up, as shown above.
While that did open a new area (thank you) I still seem to be missing private 😅
Ahhh. I had Content Restrictions on limiting myself from Instagram and my email in the browser which then hid the Private option (I'm not sure it was like that pre iOS15...)
