My water reject is on but it will not go off I have tried turning the Digital Crown that won’t work so I don’t Know what else to do

You really need to roll your finger on the Digital Crown a little more than 1in. The screen should show the water drop icon expanding into a circle and you have to keep going until it reaches the border of the "background circle".
