El Capitan won’t work on any recent Mac, so you will be migrating your contents.

Very simple, please follow the directions in Setup Assistant and Migration Assistant. This is the easiest, quickest and most reliable method bar none! If you do not have a Time Machine backup of your old Mac please create one!!!! If you need an external HD for Time Machine many experienced users on these forums prefer the OWC Mercury Elite Pro due to their high reliability, reasonable price and ease of use.

Also, you cannot install an earlier version of Mac OS than what the computer originally shipped with. In other words, if the new machine comes with Monterey, you cannot go backwards in Mac OS.
