I need to print out a VAT receipt for tax purposes for a computer I bought recently but have been on Apple site for over 30 mins trying to figure this out.... any ideas anyone?

You need to get that kind of form from the apropriate department of your country's governing authority. To prove it, you can just print out a copy of your receipt from Apple. Here is the only available information from Apple:
