Storage no longer there

About a year ago I had the iPhone XS, I didn’t have a lot of storage on it so I started paying $1/month for 50 extra GB. I got the iPhone 13 Pro in September and got the one with 256 GB. I recently just realized I was still paying for the extra 50GB from my old iPhone so I cancelled the subscription. Today I go on my phone and it tells me I’m out of storage even though I paid for the 256 GB when buying the iPhone 13 Pro and i’m back to 5GB, why is it doing this?

The 5GB is your iCloud (free) storage. Your phone is, and will always remain at the capacity it was when you purchased it, in this case 256GB.
