How do I delete photos from my phone after imported to Mac?

Manually - select them, then delete them.
The setting "delete after import" is not advisable because if anything goes wrong during the transfer to your mac there is a risk you lose all your pictures. Much better to transfer - then check they are safely on your mac, then delete manually from the phone.
