There is no choice. It will erase everything including photos.

This process deletes your data and settings, including your passcode, giving you access to set up your iPhone again.
After you erase your iPhone, you can restore your data and settings from backup. If you didn't back up your iPhone, you can set it up as a new device and then download any data that you have in iCloud.
Ok, thank you. I think my next phone will be a flip phone. No reason to save this one or buy one of the most expensive phone brands on the market if its just going to erase the reason I bought the thing in the first place. Its super strong security system is not protecting me from anything but my memories and its going to erase years of them. Lesson learned, stay away from iphone. Its sad to say because we was very loyal to apple. 5 iphones, 2 ipads, 2 ipods, 2 mac computers. There should have been a way to still get to the photos even after the lock out. Thanks anyway. My old digital camera never erased my photos.
I blame Apple, I tried to back up my phone but the computer (Mac) would not accept the pics, I also did not put in the wrong pin, also when I bought the phone no one told me I had to activate the icloud feature so now when I look it up the photos are not there, I am not a 20yr old tech savvy kid I am old and old school. I have had digital cameras and I can easily remove the card and take the pics of the wedding or the birthday to the store even if the camera was broken but can't do that with my phone right now, also I have nothing anybody would want to steal, no one wants to steal a pic of my Dad before he died. All they had to do was separate the photos from the rest of the phone so you could remove them even if your phone for no good reason disabled itself. No one wants the photos I have but me. Other people tried to warn me about Apple and told me to get the other brand but like you I blindly stuck up for them. But they never had this problem, and never had their data stolen. I could see it if I worked for the Gov. or a Tech company but I don't. If it died because its memory is too full it should have just locked up with the option to unlock it but no it goes directly to lock up and erase. I am not trying to steal my own info, its my phone so give me the number pad so I can put in my pin and unlock it its that simple but no they wont let the owner of the phone have access to it. You should at least give the owner a chance to unlock the phone they own. I can unlock a cabinet that I lost the key for 30 yrs ago by taking the numbers on the lock to the locksmith and getting a key made- simple. Apple wont let me put in my key (pin #) that I have, the phone will not bring up the pin pad, thats all I need and I can unlock my phone get my pics and we can all be happy again but they did not give me that option they just took the pad away. SO YES I blame Apple for not thinking this through and giving us this option and I am not the only one and the one thing I have been told in all the years I have been working is TAKE CARE OF THE CUSTOMER, IF YOU SEE A PROBLEM WITH THE PRODUCT CORRECT IT. Its not about if you think its a feature it should have or not its if your customers or possible customers think it should be a feature it should have. Trust me if you don't like or want to help your customers someone else will gladly take them. So yes could your customers be more tech savvy and never make a mistake maybe, just like you don't need your airbag or seat belt because no one makes a mistake driving right? Your car might run out of gas or blow a gasket but you can still get your kids or pets out. It does not lock you out and not let you back in. So I now know what I need to do. There is too much hate in our country (and world) right now and I don't think we need to feed that monster so like I said-lesson learned. Thank you for your help I do appreciate it. I am always willing to help someone when they need it and its nice to see I am not the only one. We can always disagree without hating or getting angry. I hope your day is going better than mine. Thank you for the info, have a good blessed day, I now have to go find me a new phone and maybe a small camera to take with me for the next holiday while some family members are still with us. Thank you and goodbye.
If I start the recovery process will it give me a choice to update so I can save my photos or will it go straight to erasing all my photos?
The lesson you should have learned here is always backup your phone. Blame yourself, not Apple who sets it up this way to protect your data.
