Upgrading from an iPhone 7 to an iPhone 11

If I back up my iPhone 7 in iTunes can I then restore the back up to my iPhone 11 using only restoration of certain applications such as notes or messages, etc.?

I have a doubt If I have an iPhone 6 Plus and I want to update to an iPhone 7 plus, and I make a backup in the iTunes Application in my PC. If I try to load my backup of my iPhone 6 plus, to my new iPhone 7 plus, would that work??? I mean... Will I have all my photos, songs on garageband, information etc etc that I had on my iPhone 6 Plus loaded on my new iPhone 7 plus??? Please Help!
