Go to Settings->Display & Brightness and make sure the appearance is set to Light.
If it is set to Light, then go to Settings->Accessibility->Display & Text Size and make sure Smart Invert or Classic Invert are not turned on.

One reason your background may have turned black with white lettering is because you may have accidentally turned on Dark Mode which is a mode I use quite often especially at night to read.
There are a number of methods for turning Dark Mode Off and On including asking Siri and the following link provides more detail on this: https://support.apple.com/en-au/guide/ipad/ipad997d972d/ipados
Maybe dark mode and night shift was enabled
Settings > Display & Brightness
or maybe an accessibility setting in:
Settings > Accessibility > Display & Text Size
