Is this phone inherited from another or a "gift"? Seems you should know already that a dual-line phone had two lines, and who the carriers were for those lines.
You just don’t activate the 2nd line if you don’t need it. If the phone is used and came with the 2nd line enabled then the phone was not properly reset by the previous owner, so you would need to factory reset the phone and not restore a backup.
FWIW my iPhone 12 has only been used with a physical SIM card, no eSIM has ever been activated, and I have two IMEIs

Because the iPhone 12 is a dual carrier phone. You can have 2 “lines” on it with 2 different numbers, and also 2 different carriers (assuming it is SIM-unlocked).
