When pasting from a source with a different font how can I retain the font I am using in email or whatever document I am in? If that is not possible, how can I change it, once pasted, to match the font of my email or document? My software version is 15.1

What I do: press on email body. Choose Select All. Go to Aa and choose a font. Maybe there is another way but this quickly works for me.
iPadOS has had limited support for alternative fonts for some time - some fonts buillt-in, others can be added - although not all Apps have support for additional fonts.
