On both my iPad and iPhone in settings, what should I have a tick beside in start a new conversation from, my cell # or email?

Thanks for reaching out through the Apple Support Communities about the “Start New Conversations From” option for iMessage.
While you can select either option, it is usually best to select whatever item your contacts are most likely to have saved on their device. So if your contacts are more likely to have your phone number saved as opposed to your email address, you’d want to select your phone number.
