On iPhone 7 plus how do you make a contacts particular number be first choice dialing one when he's got several numbers?

While that's not currently a feature, you can provide feedback to Apple by going to Product Feedback and picking the most appropriate product or service. This way your feedback will get to the team who manages these features.
