Before deleting any valuable or large Photos and Videos etc.
you might want to transfer them (Eg: to Photos in Mac) for easy access.

NB: There are several more ways to transfer photos and videos to your computer listed at the bottom of the article:

then tap Enable to turn it on or tap the recommendation to review the contents you can delete.

Apple has a support article: "Locate backups of your iPhone,"
Says:
NB: Don't edit, relocate, rename, or extract content from your backup files,
because these actions might ruin the files.
and
If you need copies of your backups,
you can find the Backup folder and copy the entire folder (not just part of it) to another place,
like an external drive or network-storage location.
When you use Time Machine, it automatically copies your Backup folder when you back up the Home folder on your Mac.
