How do you change the default settings to print in color?
Do you have two printers (one monochrome, one color) present in your Printers & Scanners printers panel? If true, you right-click on the color printer and select Set Default printer. If your color ink/toner is depleted, that is a replenishment decision.
My Mac is in night mode
I only have one printer that is connected to my Mac Pro. It prints in color and black and white but is only printing in black and white. I want it to print in color.
Ink is full on both black and color

When go to print something, the print dialog box should have the option to select Black/White or Color.
I have an HP Envy 4158
That is a simple Black and White Doc.
Open Photos and see what happens when you try to print a colored Photo.
Optionally choose a Doc. with color or add color to that Doc, then print that Doc.
