If you were us syncing contacts with iCloud, see this for help.

Restore contacts stored in iCloud on iCloud.com - Apple Support

If you were including contacts in your backups, you would have to restore a backup that includes the deleted contact. When you restore a backup, you overwrite the contents of your device.
