I have a 2013 iMac with High Sierra. If I want to upgrade the OS, how far can I go since I received a message that I could not upgrade to Big Sur?

A 2013 iMac can run Catalina and that is it. You can get Catalina by clicking (and carefully reading) How to get old versions of macOS. Considering the age (it is 10 years old) of your computer you also may want to begin considering replacing it as it is now considered vintage and cannot run current versions of Mac OS.
