I have a MacBook Pro, 13 inch, mid 2012. It's not on the list for Big Sur. Does that mean I need a new computer (just updated with Catalina 10.15.7) before it slowly dies?

A mid 2012 MacBook Pro can be upgraded to Catalina 10.15.7 but no later.
You can continue to use it with Catalina; if you need to run any software that requires a version later than Catalina then you would need to either replace the MacBook Pro or find alternative software.
