Using uploaded Apple Gift Card
How do I access the money in my apple gift cards that I've uploaded when I purchase items from the app store? I find it frustrating and complicated to use this money that is supposedly in my account.

That doesn't sound right. See "what payment method is charged" in this guide: How apps, content, and subscriptions from Apple are billed - Apple Support where the credit balance is always first (except for gifts).
If that is not what is happening, contact Apple Support.
