Can I first suggest you check if you have the most recent iPadOS which is 15.2.1 (if you do not have it already) as that sometimes resolves bugs and includes other improvements. The following link explains how to do this:

Can I also suggest you 'Force Restart' your iPad as that also may help clear legacy issues with apps and the following link explains how to do this:

In regards to emails being blank the following suggestions were made in a previous post:

• Turn off 'Private Relay (Beta)' in Settings > Profile > iCloud
• Turn off 'Hide My Email' https://support.apple.com/en-au/HT210426
• Turn off 'Protect Mail Activity' in Settings > Mail > Privacy Protection
• Turn on Airplane mode, wait 10-20 seconds, turn on again (swipe down top right of screen)

The above worked for some but not all and they had additional issues with emails not just being blank such as email app crashing...
