What is it and why does it pop up when I sign into Shoprite...among other sites.

Cloudflare is a service that tries to protect websites from denial of service attacks (and other mischief).

ShopRite may be using their service to keep their website from going down and is filtering traffic to do so.

https://shoprite.com and Cloudfare is not popping up on my setup.

Running Monterey macOS 12.1 with Safari 15.2 and an Ad Blocker extension.

Thanks. I appreciate your response. I eventually figured out that it wasn't me.... It's them! Trying to find clear information about it was difficult.
