iOS sends email from an old email address by default

My original apple ID used an old email address. A couple of years ago I updated my apple ID to a new email address, but when I send email from iOS devices, it always sends them from the old email address. Although I have looked everywhere, I can't find anyplace where the old email address is still listed. Anybody have any ideas how I can fix this bug in the system?

Thanks, but this did not solve my problem. A bit more context may help. When I first set up my Apple ID, I used my university email address. A couple of years ago, I changed my Apple ID to my gmail address. I have accounts for both email addresses set up on all my devices, with the gmail address designated as the default account. When I send an email from my laptop, the gmail address is the default address that shows up in the mail window (below the subject line). When recipients get mail from my laptop, it shows up as having come from my gmail account. That is as it should be. When I do the same thing using one of my iOS devices, the gmail account once again shows up as the default from address (now above the subject line), but when recipients get mail from my iOS devices (both iPad and iPhone), the mail shows up as having come from my university email account (even though it shows up in my gmail sent email box).

Strange behaviour, I know.
