Smtp server in Apple Mail can't be changed - reverts back

Hi,

I have followed countless guides on how to change smtp server in apple mail. The problem is that the smtp server I select isn't used. When I send an email, or open and close the smtp settings for the account, after some time the original smtp server is always reselected.

Furthemore, on the link below it says the smtp server will revert after changing networks or disconnecting from wifi. I don't want this to happen. I want the same smtp server to always be used.
