Apple Watch unable to activate/update

I recently got a new Apple Watch series 6 but I am unable to activate/pair it with my iPhone because it keeps on requesting for an update but says that my phone is not connected to the WiFi. I have tried everything from reinstalling the Watch app and hard resetting my iPhone but nothing is working. I wanted to update from my series 3, which I did unpair
