Assuming that you still have your old iPad, you can simply reset your new iPad and repeat the transfer procedure - or, if you have retained the original iCloud or iTunes backup of the old iPad, just restore from this backup. You should note that the transfer or restore processes are all or nothing:
Settings > General > Transfer or Reset iPad > Erase All Content & Settings

The answer is a YES but ONLY IF you have a backup file saved from that time period. This is because you will need to Restore it from a backup file. If you do not have a backup file on a computer from that day/date, then you cannot accomplish what you are looking for.
