So I cracked iPhone 13 pro max back cover will apple care cover it all or do I have pay?

You'll need to pay, but not as much as if you didn't have AppleCare+. Only manufacturing defects will be covered for free.

If you're referring to regular AppleCare instead of AppleCare+, it doesn't cover accidental damage.

Hello,

If you have AppleCare+, it will be $29 for Screen-only or back-glass only damage, and $99 for Any other damage.
